Caramelised Onion Pasta 🧅🧅 Do you have onions in the pantry that need to be used up? Here’s the recipe for you 👏 Ingredients:  2 tbsp oil (I used the oil from the jar of sun dried tomatoes) 6 small onions (or 3 large)  5 cloves garlic, minced 1/3 cup sun dried tomatoes, roughly chopped ½ tsp chilli flakes 1 tsp dried mixed herbs  1 tbsp balsamic vinegar ¾ cup unsweetened dairy-free milk OR cream  Zest of 1 small lemon Squeeze of fresh lemon juice Salt & pepper, to taste 1 bag (120g) baby spinach 350g pasta of choice (I used mezze maniche) Method: 1. Heat the oil over medium heat in a large pan then add in the onions. Sauté in the oil for about 1 minute, season with a generous pinch of salt, lower the heat and pop the lid on for 10 minutes. Open every 2 minutes to give it a stir.  2. Remove the lid and stir well. Once the onions start to leave a sticky brown layer on the pan, deglaze the pan with a splash of water, stir well and repeat the process by adding more water as needed. This process will take about 1 hour. 3. Once caramelized, increase the heat to medium high and add in the garlic, sun dried tomatoes, chilli and herbs. Fry for 1 minute. Add in the balsamic vinegar and stir through. 4. Pour in the non-dairy milk or cream and stir well to combine. Pop the lid, reduce the heat to medium and simmer for 1 minute.  Add in the lemon zest and juice and season well with salt and pepper. 5. Cook your pasta of choice until al dente. Drain and reserve some pasta water on the side.  6. Add the baby spinach, pasta and a splash of pasta water to the pot and cook over medium high heat until well combined.
