For episode 2 of high protein vegan, we’re making chilli lemongrass tofu that you’re gonna be OBSESSED with 😍🌶️ It's one of my fav ways to make tofu and it's also really simple! FULL RECIPE BELOW 👇🏼 Serves: 2-3 (depending on your portion size) *Note: Protein content will depend on the tofu brand you use, but for a generic 450g block you’re looking at around 70g protein for the whole batch.  Ingredients: 450g firm tofu 1 tbsp oil, divided 1 large red chilli, finely diced 1/4 cup (30g) frozen minced lemongrass, thawed (you can mince your own, make sure it’s very finely chopped or processed though and hard stalk part only) Sauce: 1 tbsp soy sauce 1 tbsp vegan fish sauce (or replace for extra soy sauce) 1.5 tsp sugar or sweetener of choice 1/8 tsp ground black pepper 1/4 tsp mushroom seasoning (can omit or replace for extra soy sauce) 1/4 cup water Method 1. Remove tofu from the packaging and drain and pat off any excess liquid. Slice into your desired shape (eg. rectangles or triangles). 2. Heat 1/2 tbsp of the oil on a pan and fry over medium high heat until golden on both sides. Alternately, you can also lightly spray with oil and airfry them at 200°C for 15 minutes. I prefer pan frying as airfrying can make them slightly too hard/dry. 3. In the meantime, mix together all of the sauce ingredients. 4. Clean the pan and heat the remaining oil over medium heat. Add in the lemongrass and chilli and cook for 2 minutes until fragrant and slightly softened. 5. Pour in the sauce and add in the tofu and toss well to coat or until tofu absorbs all of the sauce.
