@erekasfood: CHARRED CARROTS AGRODOLCE w/ CRISPY FARRO!! Agrodolce is a sweet & sour sauce that elevates charred veggies, pork, chicken and can even be used as on a sandwich. Agrodolce -Sweet & Sour Sauce (Yields about 1/2 cup) 1 cup red wine vinegar 1/3 cup sugar 1 ounce golden raisins 1 tbsp Calabrian chili paste -Add vinegar and sugar to a non reactive small sauce pan. -Bring to a high simmer and stir until the sugar dissolves -Let simmer until the vinegar reduces to about 1/2 -Add the raisins and stir in the Calabrian chili pepper Charred Carrots (Serves 2-4) 2 bundles of small to medium sized carrots, rinsed well 1/2 tbsp grape seed oil or vegetable oil 1/3 cup cooked farro, drained and room temp 1 tbsp olive oil 1/2 cup agrodolce (see recipe above) 2 ounces feta, goat cheese or ricotta salata 1/4 cup chopped fresh parsley -Bring a large pot of salted water to a boil -Add carrots and boil for 1 to 2 minutes depending on the size of the carrots. My carrots were on the smaller side, so I let them boil for only a minute. -Remove carrots and let them dry. -Add carrots to baking sheet and coat with grape seed oil -Broil for 2 to 3 minutes on each side or until charred on both sides. -Place carrots in a serving dish and set aside -Add olive oil to a medium sized frying pan and heat to medium-high. Add cooked farro and let cook until crispy and golden brown. -Top carrots with agrodolce, crispy faro, cheese and parsley.
