Pulled Pork - the perfect crowd pleaser from freezer to table with very little effort Ingredients - 2,8- 3kg leg of pork or pork shoulder - 1L of apple juice - 250ml chicken stock - Spice mix (salt, paprika and cumin) For the BBQ Sauce OR you can buy a shop bought bottle of BBQ sauce - 250ml tomato sauce - 120ml mustard sauce - 120ml Mrs Balls Chutney - 60ml soya sauce - 60ml sugar - 60ml vinegar Method - trim excess fat from the pork - Pat dry with paper towel - Season generously with salt, paprika and a bit of cumin - Place in a slow cooker - Add the apple juice and chicken stock to a jug and pour into the slow cooker, don’t pour over the pork - Place the lid on a cook for 8-10 hrs on low or 4-5 hrs of high. - It’s ready when the meat falls off the bone - Remove from the slow cooker. SAVE the cooking liquid - Remove the fat cap, rind and any big fat globules - Shred the meat. Add a little of the cooking liquid (60-125ml) - Make the bbq sauce by adding all the ingredients together and heating it on the stove top until the sugar is dissolved and mixture warmed through. - Pour over the shredded pork. Mix well - You can either freeze it or serve as it. I like to heat mine through in the frying pan so it gets charred & gnarly. - Serve with wraps, coleslaw, cheese, guacamole or over a baked potato. #pulledpork #porkshoulder #slowcooker #bbqpork @Ina Paarman's Kitchen
