HOMEMADE COTTAGE CHEESE in under 30 minutes from start to finish! There's apparently a cottage cheese shortage, but don't worry, I got you! This will not only take less time to drive to the store and back, but it's quite cost effective considering the amount of cottage cheese you can make from one gallon of milk! - You'll be hooked! Ingredients: 1 gallon of whole milk 1/4 cup organic vinegar or lemon juice Optional: Sea salt to taste Yogurt Method: Heat milk in a pan and continue stirring so it doesn't burn until it reaches 180 F. Then add 1/4 cup white vinegar / lemon juice and stir every so often (not continuously) to break up the curds that will begin to form almost instantly. Remove from heat after a few minutes and you can visibly see plenty of curds. Prepare a bowl with a strainer over it and pour mixture over the strainer to catch the curds and allow the whey to strain (reserve it! You can freeze it into ice cubes to add to smoothies). Press down the curds to help it along (be careful not to burn yourself as it will be hot!). Break up the curds and add a bit of the whey and plain yogurt if desired to reach desired consistency. *this is why you see
