This is for pork shoulder or belly. Start with good quality, free range pork and trim the edges to remove any unwanted or loose skin. Even if the skin comes scored (which is not my preference) pierce the skin all over with a meat tenderiser or sharp knife tip, then smother with a layer of salt to draw out the moisture. Brush off the salt after 20-30mins and pat dry Then leave uncovered in the fridge for upto 72hrs. This will dry the skin out for perfect crackling Very lightly oil and salt the skin, then cook at 240c for 30 mins. Remove from oven and turn down to 160c, next wipe the skin with vinegar (I used rice or white wine vinegar) then return to the oven and cook for 2-3hrs If cooking a rolled pork belly then turn it every 30mins to get even crackling. You can repeat the vinegar step after an hour if the skin still isn’t crackling If using a ceramic bbq, reverse the cooking technique by turning up the temperature toward the end of the cook and not at the start, as you will have trouble bring the temperature down for the slow cook Allow to rest and serve #pork #crackling #porkbelly #roastpork
