Cake Layers: Prepare the red velvet cake mix. Bake in two 9-inch round pans according to the box directions. Let them cool completely. Frosting: In a large bowl, beat the softened cream cheese and butter until smooth. Add the powdered sugar one cup at a time, then add the vanilla. Beat until light and fluffy. Assemble: Place one red velvet cake layer on your serving plate. Add a layer of cream cheese frosting. Carefully un-mold your frozen cheesecake and place it on top of the frosting.
