@sobfives: made snowskin custard mooncakes for my husband 🥮 happy mid autumn!! #cookwithme #BakeWithMe #mooncakerecipe #midautumn #dessert Snowskin: - 50g glutinous rice flour - 50g rice flour - 25g corn flour / corn starch - 25g sugar - 185g milk - 25g condensed milk Combine all the ingredients above in a bowl and hand whisk till smooth. Steam the bowl for 25 minutes in a closed pot. While it’s steaming, start making the custard filling. Custard Filling: - 60g milk powder - 35g corn flour / corn starch - 120g milk - 60g sugar - 50g butter - 3 eggs Add the milk powder, corn flour, milk and sugar in a bowl and mix till combined. Then add the butter and 3 eggs. Whisk the mixture till smooth. In a pan on low heat, pour the custard mixture and stir regularly. Once it becomes lumped together and no longer liquid, pour it into a bowl and set aside. Making the mixture: Once the snowskin bowl is done steaming, cut into hardened mixture and score it into small squares. Add about 25g of butter and let it seep into the mixture. Once done, transfer the snowskin mixture into a bowl and knead it until combined and smooth. Shape it into a ball and set aside. Using a weighing scale, measure out 20g of snowskin mixture for each mooncake and shape it into a ball. Measure out 15-20g of custard filling for each mooncake and shape it into a ball. Assembling the mooncake: With floured hands, flatten out one 20g snowskin ball before adding the custard ball in the middle. Close the snowskin around the custard filling and shape it smooth. Coat the combined mooncake ball in flour (you can use cooked glutinous rice flour for this) before putting it under the mooncake moulder. Press down using the moulder and form your mooncake! To get coloured mooncake, have a separate bowl with food colouring and follow the same steps above. Once the mooncake ball is covered in flour, dip it into the coloured mixture before coating it flour and second time. Afterwards put it in the moulder and form your mooncake. Once done, store all the mooncakes in the fridge for a few hours before eating (the mixture needs time to combine). If the mooncakes have been in the fridge overnight, leave it on the counter for 30mins before serving. (Recipe inspired by @Ms Shi & Mr He 🥮🫶🏻)
