@xiensscran: Wonton noodle soup is literally one of my favourite comfort meals, perfect when the weather is cold and all you want is juicy wontons in a light broth 🫰🏼 Note: To freeze, lay the wontons individually on a tray and freeze for 30 mins, remove from tray, distribute between ziplock bags and pop back in the freezer. For the wontons:
250g pork mince (20% fat) 1/2 tsp sugar
1/2 tsp salt
1/4 tsp MSG
1/4 tsp ground white pepper
1 tsp chicken bouillon powder 1 tbsp oyster sauce
1 tbsp cornstarch (mixed with 1 tbsp water) 1 tbsp sesame oil 1 tbsp Shaoxing wine 2 spring onions 1 egg 24 wonton wrappers For the broth:
700ml water
1 1/2 tbsp chicken bouillon powder
1/4 tsp ground white pepper
1 tsp sesame oil 2 tsp light soy sauce 1 small bowl of warm water (for wonton wrapping) 2 heads of pak choi 160g fresh wonton noodles 1 tbsp vegetable oil Add the pork mince to a large mixing bowl along with all the seasonings. Thinly slice the spring onions and add to bowl along with the egg, mix well. Lightly wet two neighbouring sides of a wonton wrapper with warm water. Place a tsp of the mix in the middle of the non-floury side of a wrapper, then fold a corner to the opposite to form a triangle, ensure both sides are fully sealed. Fold small pleats then squeeze to seal, making sure the wontons are plump in the middle. Cover the wontons with a lightly wet cloth in between folding to prevent drying out. Place 8 wontons in a pot of boiling water, and move them around to prevent sticking to the bottom of the pot. They will take around 3-5 minutes to float to the top. Once they do, boil for another minute and set aside. Rinse in cold water to prevent sticking. Freeze the remaining uncooked wontons (see note). Meanwhile, in a separate pot add 600ml water on medium heat, add the seasonings for the broth and stir well. In a separate pot, add 1 tbsp of vegetable oil and cook the noodles for 30 seconds and remove, rinse in cold water to prevent from sticking. In the same water add the pak choi and cook for just 30 seconds then remove. Distribute the noodles, pak choi, wontons and broth between two bowls, garnish with extra spring onions and enjoy. #wantanmee #wontonnoodlesoup

The soup is the soul of the dish, however photogenic the TT is, unfortunately this will not remind you of won ton noodles (Toasted dried fish powder, shrimp shells etc)
