Using the sous vide method on a filet or a ribeye, is screwing it up. IMO. Nonetheless her presentation is beautiful and I have no doubt in her skill.

Meanwhile I cooked mine on the smoker, reverse seared and am kicked back with my third cocktail, by the time the sous vide heated up. It’s steak, keep it simple!

This looks great. You can get similar results by just cooking in the oven at about 250°F until it's 5 to 10 degrees less than desired doneness. Then sear in very hot pan. 🥰
