I always buy two pineapples when they’re on sale so I can do tepache. I split a habanero and toss it in there with fresh ginger, cinnamon and brown sugar. Love it over ice with a squeeze of lime

Skins of 2 pineapples in a pot with 128-144oz filtered water, 1 cup brown sugar, 2 cinn sticks. 3-4 days on the stove covered with a cloth will produce the same result. Scrub/wash before using. Simple
