Uszka z Grzybami ~ The Classic Polish Christmas Eve Dumplings ( Little Ears with Wild Mushrooms ) The tiny, hand-folded treasures that belong in every bowl of ruby-red Christmas borscht, Soft, delicate dough + intensely aromatic dried mushroom filling = pure holiday magic. Exactly like the ones waiting on your table right now!  ( makes ~ 80-100 tiny uszka )  Ingredents Dough: 2 cups ( 250g ) all-purpuse wheat flour 3/4 cup ( 180ml ) hot ( not boiling ) water 1 tablespoon oil Pinch of salt Mushroom filling: 60g ( 2oz ) dried mushrooms ( porcini or mixed forest mushrooms ) 1 large onion, finely diced  1-2 tablespoon butter or oil Salt & freshly ground black pepper to taste  Method  Mushroom filling  ( start the day before or morning of ) Soak dried mushrooms in hot water for at least 1-2 hours ( overnight is best ). Cook them in the same water for 30 minutes. Drain ( reserve the liquid for borsht if you like ), cool, and chop very finely. Saute the onion in butter until golden, add chopped mushrooms, cook together 5-7 minutes. Season generously with salt & pepper. Let cool completely.  Dough: Sift flour into a bowl, add salt and oil. Gradually pour in hot water while stirring with a spoon. When cool enough, turn onto a floured surface and knead until smooth, soft and elastic ( 5-8 minutes ). Drop uszka in batches ( don't overcrowd ). Cook 2-3 minutes after they float to the surface. Remove with slotted spoon. Serve swimming in steaming, clear red Christmas borscht.
