@thefitlondoner: DAY 20 of VEGANUARY | Gnocchi traybake! SO easy, high in protein and ready in just 30 mins! Baked gnocchi will always be a favourite of mine; the gnocchi goes crispy but is still chewy in the middle. An oldie but a goodie! Serves 3.
▫️ 500g gnocchi
▫️ 1 head broccoli, cut into florets
▫️ 100g chestnut mushrooms, sliced
▫️ 200g baby plum tomatoes, halved
▫️ 1 red onion, sliced
▫️ 4 vegan sausages of choice, sliced
▫️ 1 tbsp olive oil
▫️ 1 tsp oregano
▫️ Salt and pepper, to taste
▫️ 2 tbsp vegan pesto
▫️ Chilli flakes and a drizzle of good-quality olive oil, to serve Method: 1. Preheat your oven to 180C. 2. Add the gnocchi, broccoli, mushrooms, tomatoes, onion and sliced vegan sausages to a large ovenproof dish. 3. Drizzle with olive oil, sprinkle with oregano, salt, and pepper, then toss everything together to coat evenly. 4. Bake for 25 minutes, stirring halfway through, until the gnocchi is golden and crisp in some places, and the veggies are tender. 5. Remove from the oven and stir in the vegan pesto. 6. Serve with a drizzle of olive oil, a sprinkle of chilli flakes, and some vegan cheese if desired. ENJOY! #easydinner #FoodTok
