that's interesting. I've never heard it be called "taro stem". it's usually "giant elephant ear". "Bac ha" in Vietnamese.

in malaysia, we cook taro stem as sour soup as well but instead of using tamarind, we use tempoyak (salty sour fermented durian paste), chillies, thai basil, ginger torch, galangal and okra.
