One Pan Seared Shrimp In a Garlic, Tomato Olive Sauce  It’s quick, easy, and packed with flavor!  The best part? You only need one pan! Start by searing the shrimp until they're perfectly golden. The aroma of garlic will fill your kitchen, making it hard to resist. Next, add juicy tomatoes and olives to create a vibrant sauce. Let everything simmer together for a few minutes; the flavors meld beautifully! Place a large pan on medium-high heat. Add olive oil then the shrimp in 2 batches. Cook the shrimp for 1-2 minutes per side until pink and remove from pan.  4. To that same pan add in the butter, the shallots and garlic. Sauté for about 2 minutes until fragrant. Next add in the tomatoes and olives, stir and cook for about 5 minutes until the tomatoes are softened and release some of their juices.  5. Season the tomato mixture with 1/2 teaspoon each salt, black pepper, chili flakes, the zest of one lemon and juice of half a lemon, Stir again!  6. Return the cooked shrimp back to the pan with all the juices and add the chopped parsley. Give everything a good toss and simmer for about 4-5 minutes until the shrimp are heated through.  7. Garnish with more parsley when serving.
