@thrivingonplants: The BEST umami-packed Mushroom Congee recipe 🍚 The key ingredient? @DJ&A Shiitake Mushroom Crisps 🍄🟫🍄🟫 Enjoy as a ready to eat snack or rehydrate them to cook with, either way they’re SOO delicious 🫶🏼 Order them online on their website or shop at Coles, Woolworths and Costco so you can also cook up this recipe 🛒 Ingredients: 10 @djaproducts Shiitake Mushroom Crisps 1 small thumb ginger, peeled and finely chopped 2 stalks green onions, whites and greens divided 1 tbsp soy sauce 1 cup cooked white rice Water, plus more as needed (see step 1) ½ - 1 tsp mushroom stock powder, or more to taste (I made my own by blending the mushroom crisps with salt, sugar, spices) 1/8 tsp ground white pepper Salt and/or soy sauce, if needed Topping: Coriander
Green onion
Fried shallots
Sesame seeds
Fresh ginger
Sesame oil
Chilli oil
Fresh chilli Method: 1. Add the mushroom crisps into a bowl and pour boiling water over. Cover and set aside for 10 minutes or until softened. Remove from liquid and thinly slice. Reserve the liquid to use later (I measure out how much mushroom liquid there is, then I add extra water to make up 2 cups liquid total). 2. Heat a splash of oil in a saucepan over medium heat. Add in the ginger and white parts of the green onions and fry for a few minutes till fragrant. 3. Add in the mushrooms and fry for a few minutes until golden. Add in the soy sauce and fry for 30 seconds, stirring frequently. Reserve a few to use as a garnish later. 4. Add rice, mushroom liquid, water, stock powder, pepper and salt. Mix well and bring to a boil over high heat. 5. Once boiling, turn down to low and simmer for 15-20 minutes, stirring occasionally. If you prefer a runnier congee, add in extra water. 6. Once thickened, vigorously whisk until you reach your desired texture. Taste and season if necessary then turn off the heat. 7. Top with the mushrooms along with your other garnishes. Enjoy! Oh god no, please do not do this. I know Erin Patterson made you think Asian grocery store mushrooms are bad but they're not. Buy dried shiitakes from your local supermarket that isn't laden with fat and salt.
