🥘 Honey Balsamic Braised Pot Roast Ingredients • 3–4 lb beef chuck roast • Salt & pepper to taste • 2 tbsp olive oil • 1 large onion, chopped • 3 cloves garlic, minced • 2 cups beef broth • 1/2 cup balsamic vinegar • 1/4 cup honey • 2 tbsp tomato paste • 2 tsp dried thyme • 2 tsp dried rosemary • 3–4 carrots, cut into chunks • 2–3 celery stalks, chopped • 2–3 potatoes, cut into chunks Instructions 1. Sear the Roast: • Season beef with salt and pepper. • In a large Dutch oven or heavy pot, heat olive oil over medium-high heat. • Sear roast 4–5 minutes per side until browned. Remove and set aside. 2. Build the Sauce: • In the same pot, sauté onions and garlic 2–3 minutes. • Stir in tomato paste, balsamic vinegar, honey, thyme, and rosemary. • Add beef broth and bring to a simmer. 3. Braise the Roast: • Return roast to the pot. • Add carrots, celery, and potatoes around the meat. • Cover with a lid and simmer on low heat for 3–4 hours, or bake in a 325°F (160°C) oven for 3–4 hours, until meat is tender. 4. Serve: • Slice or shred roast and spoon sauce and vegetables over it. • Optional: drizzle extra balsamic glaze for added shine and sweetness.
