The whole purpose of this cookbook is to take the guesswork out of meal prep—making it easy, affordable, and actually delicious. Whether you’re in residency like me or just juggling a busy life, this is the type of recipe that keeps you consistent and on track. 🍍 Ingredients (Makes 8 servings, 1½ cups each): 	•	3 lb chicken breast 	•	1 cup rice 	•	1 red onion 	•	2 jalapeño peppers 	•	(15 oz) can unsweetened diced pineapple 	•	(12 oz) G Hughes Sweet Chili sauce 	•	1 bunch cilantro 	•	2 tbsp garlic powder 	•	2 tbsp onion powder 	•	1 tsp black pepper 	•	½ tsp cayenne pepper 👨‍🍳 Instructions: 	1.	Dice red onion and jalapeño peppers. 	2.	Add chicken, sweet chili sauce, and all listed seasonings to your crockpot. 	3.	Cook on high for 3–4 hours or low for 5–6 hours. 	4.	Shred the chicken in the crockpot to soak in all those bold flavors. 	5.	Add diced vegetables and drained pineapple. Cook on low for 30 minutes. 	6.	For the rice: add 2 cups water and 1 cup rice to a pot, bring to a boil, cover, then simmer on low for 10 mins. 	7.	Serve chicken and sauce over rice. 	8.
