A nostalgic fusion with bold flavors and crispy textures. We’re doing classic cream cheese rolls and the famous Hot Philadelphia, deep-fried and golden on the outside, melty on the inside.
This one takes me straight back to late-night sushi rodízio! 👩🏼‍🍳🍱 . Here’s how to make it👇🏼 . 1. Cook the rice:
– Use sushi-grade rice (small grain)
– Wash thoroughly, soak for 15 min
– Cook on medium-low heat for 30 min
– Season with 2 parts soy sauce + 1 part rice vinegar 2. Prep your proteins:
– Slice sushi-grade salmon
– Cube salmon 3. Make the tare sauce:
– 1/2 cup soy sauce
– 2-3 big spoons of brown sugar
– Boil until thick and sticky 4. Rolls: Hot Philadelphia – Spread 160g of rice on a sheet of seaweed
– Fill with salmon + cream cheese
– Dip in a flour + water batter 
– Coat in breadcrumbs
– Deep-fry until crispy and golden – Cut into 8 equal parts 5. Rolls: Fried Cream Cheese – Spread 160g of rice on a sheet of seaweed
– Fill rolls only with cream cheese – Cut in thirds 
– Seal ends with rice
– Dip in a flour + water batter 
– Coat in breadcrumbs
– Deep-fry until crispy and golden
– Make a slit in the center
– Fill with raw salmon + scallions
