♥️White Chocolate Raspberry Cheesecake ♥️ Ingredients Crust: 	•	8 oz vanilla wafers 	•	6 tbsp sugar 	•	8 tbsp melted butter Cheesecake filling: 	•	32 oz cream cheese, soft 	•	¾ cup sugar 	•	4 large eggs 	•	7 oz sour cream 	•	8 oz white chocolate, melted and cooled 	•	1/2 tbsp vanilla bean paste 	•	Pinch of salt Raspberry sauce OR 1/3 cup raspberry preserves 	•	12 oz fresh or frozen raspberries 	•	¼ cup sugar 	•	½ tbsp cornstarch 	•	½ tbsp water ⸻ Directions 	1.	Make the crust: 	•	Crush vanilla wafers finely. Mix with sugar and melted butter until combined. 	•	Press firmly into the bottom of a 9-inch springform pan lined with a parchment round. No baking needed. Wrap pan with two layers of foil, shiny side out.  	2.	Make the raspberry sauce: 	•	In a small saucepan, add raspberries and ¼ cup sugar. 	•	Cook over medium heat until raspberries break down (5–7 minutes). 	•	Mix cornstarch and water to make a slurry. Strain raspberries then Stir in the slurry and cook 1–2 more minutes until thickened. 	3.	Prepare the cheesecake batter: 	•	Beat cream cheese and sugar until smooth. Add sour cream, salt, and vanilla.  	•	Add eggs one at a time, mixing just until combined. 	•	Mix in melted white chocolate. Avoid overmixing. 	4.	Assemble: 	•	Pour half the batter over the crust. 	•	Spoon dollops of raspberry sauce and swirl gently. 	•	Pour remaining batter on top, then add more sauce and swirl for a marbled effect. 	5.	Bake at 325 F with a water bath below it and foil on the rack above. (See classic cheesecake video!) 	•	Bake 55–65 minutes until mostly set but slightly jiggly in the center. 	•	Turn off oven, crack door, let rest inside 30 min.  	6.
