Serves 4-6
1 red onion, thinly sliced
The juice of 2 limes
850g watermelon, cut into 2cm cubes
200g feta cheese, cut into little cubes
2 large handfuls of roughly chopped mint leaves
2 tbsp olive oil
1 tbsp tajin seasoning
Salt
1. Chuck the onion into a little bowl. Add the lime juice and a good pinch of salt. Mix well and leave for 10 minutes so that the onion can pickle a little. Whilst that’s happening, you crack on and chop everything else.
2. Put the watermelon into a serving dish and feta and mint toss together. add the onions and all the lime juice and mix gently. Drizzle over the olive oil and sprinkle over the tajin. Serve immediately.
