Everytime that I use gel, no matter what the brand is, I always get those white flakes in my hair and it makes my hair more dry and frizzy. Do i necessarily have to use gel with my hair if I have that experience?

I just wet my hair and use my diy flaxseed gel and brush style. Very super affordable (0.68 for 1.5oz) and good results:)
