DAY 8 of VEGANUARY | Biscoff protein truffles! Biscoff will forever be a fave of mine, so of course it had to feature some point this month! These easy, no-bake treats are the perfect combo of indulgent and high-protein - you gotta try them. Makes 10 truffles. ▫️ 100g super fine oat flour (I used @myprotein instant oats) ▫️ 50g speculoos soy protein powder (@myprotein) ▫️ 60g melted smooth Biscoff spread ▫️ 170ml plant-based milk* ▫️ A pinch of fine sea salt ▫️ 4 Lotus biscuits, crushed (for coating) *If using whey or another type of protein powder, reduce the milk to start. Begin with half the amount and add more as needed. Soy protein generally requires more liquid. Method: 1. In a bowl, mix the oat flour, protein powder, melted Biscoff spread, milk and salt until a sort of dough forms. 2. Tear off bite-sized portions and roll into balls. (I like golf ball-sized truffles.) 3. If the dough balls aren’t tacky on the surface, lightly dip them in a bit of milk to help the crushed biscuits stick. 4. Roll the balls in the crushed Lotus biscuits until fully coated. 5. Store in an airtight container in the fridge for up to 4 days. ENJOY! #veganuary2025 #biscoff #healthysnack
