Ingredients: Chicken Breast - 2 Onion - 1 small Green Onion - 6 Celery - 2 stalks Garlic - 3 cloves Bay Leaf - 2 Lemon Juice - 1 Bay Leaf - 2 Chicken Bone Broth - 32oz Salt Pepper Chili Powder Ground Ginger Dill Weed Smoked Paprika Bacon - 1/2 pack Onion - 1 Celery - 4 stalks Garlic - 4 cloves Carrot - 2 Mushrooms - 8oz Frozen Veggies - 1c Frozen Potatoes - 2c Pie Crust - 2 Chicken Stock - 3c Heavy Cream - 1c Flour - 4tbsp (+1tbsp) Salt Italian Seasoning Worcestershire sauce Directions: 1. I made my own boiled chicken but if you don’t want to do that you can just use a shredded rotisserie chicken! I added two chicken breast to a pot with one small onion quartered, garlic cloves, the juice from one lemon (I leave the lemon whole in the pot) green onion, celery and two bay leaves. Pour in chicken stock until covering the chicken breast and then season with salt, pepper, chili powder, dill weed, ground ginger and smoked paprika. Bring to a boil and then lower heat to a simmer and cover until the internal temp of the chicken reaches 165. Let chicken cool and then shred. I like to strain the pot and use the stock for the pot pie. 2. Dice all of your veggies into roughly the same size chunks and thinly slice the mushrooms. 3. Add the bacon to the skillet and cook until crispy. Remove the bacon but leave the grease. Add in the onions, carrots, celery and cook for 5-8minties until softened. Then add the musrooms and garlic and cook for another 5-8mins. Then add in the flour and mix to fully incorporate. Cook for 3mins and then slowly add in the broth while mixing. Allow to thicken for a few mins and then add in the frozen potatoes, veggies and chicken. Stir in the heavy cream and then add some more flour if needed to reach your desired thickness level (pause). Give it a taste to check your seasonings. I added some Italian seasoning, a small pinch of salt and a splash of Worcestershire. Lastly, mix back in your bacon. 4. Then top the skillet with a pie crust. Brush the top with an egg wash and some salt and pierce the center to allow steam to escape. 5. Bake at 375 for as long as it takes for the pie crust to turn brown. Mine took about 40mins. Let it sit for a little while to thicken.
