Mash the potatoes and stir in heavy cream, butter, truffle oil & seasonings. Stir until smooth and creamy Steak: •Bring steak to room temp. Season all sides generously with salt & pepper. Heat your pan on medium high heat  •Sear steaks for 2-3 minutes per side. Once turned over, add butter, garlic and herbs. Tilt pan and baste steaks for another 1-2 minutes  •Rest steaks for 5-10 minutes, tent in foil to keep warm  Red wine reduction sauce: •in the same pan, remove excess fat but keep brown bits  •sauté shallots until soft (1-2 min) •add wine, bring to a boil, then reduce heat by half  •add beef stock, simmer until thickened (about 10 minutes) •whisk in cold butter for silkiness, season to taste Asparagus:  •trim ends, sauté in olive oil and butter with garlic cloves for 4-5 minutes, until tender-crisp.
