Baked until tender with a golden, cheesy crust, they’re pure Italian comfort — just like Nonna used to make. Ingredients (makes 4 halves): • 2 red capsicums (or any colour) • 400g (14 oz) minced meat — half pork, half beef • 1 egg • 40g (1.4 oz) Parmigiano Reggiano, grated • 3 slices of bread (about 80g / 3 oz) • 1 clove garlic • Fresh parsley, handful • 15g (0.5 oz) green olives, chopped • 15g (0.5 oz) black olives, chopped • 1 tsp capers, rinsed and chopped • Salt & pepper to taste • Olive oil, breadcrumbs, and extra Parmigiano for topping How to Make It: In a blender, combine bread, Parmigiano, parsley, salt, pepper, and garlic. Blend until coarse and fluffy. In a large bowl, add the minced meat, egg, and bread mixture. Mix with your hands until smooth and well combined. Add the chopped olives and capers, mixing again to evenly distribute the flavours. Cut capsicums in half, remove seeds and white parts, and fill each half generously with the meat mixture. Drizzle with olive oil and top with breadcrumbs and Parmigiano. Bake at 200°C (400°F) for 30–40 minutes, until golden and bubbling. Serve hot — these are amazing on their own or with a side of crusty bread to soak up the juices.
