Homemade Butterfinger candy bars! They can be made gluten free, dairy free, and refined sugar free, and are soo easy to make! Ingredients: •1/2 cup natural peanut butter •2 tbsp pure maple syrup •1 tsp pure vanilla extract •1/4 tsp salt •1 cup corn flakes (I use gluten free/refined sugar free) •6oz dark or semi-sweet chocolate (I use dairy free and refined sugar free) Optional Ingredients: •1 tbsp neutral oil (you can add it to the chocolate to help thin it and make coating the bars easier) •1 tbsp molasses (you can add to the peanut butter mixture for more of a classic Butterfinger taste) Instructions: 1. First, make the filling: add the peanut butter, maple syrup, vanilla, and salt to a small saucepan and mix together. 2. Heat the mixture on the stovetop over medium/low heat until slightly thickened, then remove from the heat. 3. Crush 1 cup of corn flakes and add it to the peanut butter mixture then mix until everything is well combined. 4. Add the filling to an 8x5 loaf pan lined with parchment paper and smooth it out using a separate piece of parchment paper then place in the freezer for several hours to allow it to harden. 5. Once the filling has hardened, melt your chocolate (on the stovetop using the double boiler method or in the microwave) then set aside. Feel free to add 2-3 tsp neutral oil to help thin the chocolate. 6. Remove the loaf pan from the freezer and slice the filling into bars. Coat each bar in melted chocolate then place on a tray lined with parchment paper. I like to sprinkle with some flaky sea salt. 7. Place the butterfinger candy bars in the fridge until the chocolate coating has hardened, then dig in and enjoy!
