Crispy beef tacos RECIPE ⬇️ For the Beef 250g lean minced beef 1 small onion, finely diced 3 garlic cloves, minced 1 tablespoons taco seasoning (homemade or store-bought) 1 teaspoon smoked paprika  ½ teaspoon salt (adjust to taste) 2 tablespoons tomato paste ½ cup (120 ml) beef stock or water 1 tablespoon oil (for frying) For the sauce  1/3 cup sour cream 1/3 cup mayo 2 tbsp milk or buttermilk  1 tbsp lime juice 1 tbsp fresh parsley  1 tbsp taco seasoning  For the salsa 1 onion, finely chopped  2 tomatoes, finely chopped  1 tbsp fresh cilantro  2 tbsp lime juice 1 tbsp taco seasoning  1 tsp black pepper  Salt to taste 1. Cook the Seasoned Taco Beef Heat 1 tbsp oil in a large pan over medium-high heat. Add 1 small diced onion, cook 2 minutes until soft. Add 3 minced garlic cloves, stir 30 seconds until fragrant. Add 500 g minced beef, break it up and cook until browned. Stir in: 2 tbsp tomato paste 2 tbsp taco seasoning Salt  Pepper Pour in 80–120 ml beef stock (or water), stir, and simmer 3–5 minutes until the beef becomes juicy and lightly saucy (not watery). Remove from heat and set aside. 2. Assemble the Folded Tacos (on a Plate) Lay one tortilla flat on a plate. Add a layer of grated mozzarella (about 1½ tbsp) over the center of the tortilla. Add 2–3 tbsp of beef on top, only on one half of the tortilla. Sprinkle a little more mozzarella on top of the beef (for melt glue + cheese pull). Fold the tortilla in half and press gently so it sticks together. 3. Fry the Tacos Until Crispy + Cheese Fully Melted Heat 1 tbsp oil in the pan over medium heat (not too hot or cheese will burn before melting). Place the folded tortilla into the pan. Press gently with a spatula for full pan contact. Fry 2–3 minutes until the tortilla is crispy and golden and the cheese is melted inside.
