Roti for beginners  I’ve always struggled to make proper rotis but after a lot of experimenting and trial and error, I find this method of forming atta has helped me achieve fluffy delicious rotis. Everyone has their own way and that’s ok!  Ingredients 4 cups chakki atta (any brand)  1 tsp salt  240 ml of warm water  Directions:  1. In a large bowl, pour 4 cups of atta along with salt. Roughly mix it with your hands  2. Slowly add half the warm water to the flour and slowly mix with your hands. I like to squeeze the atta and water in my hands which helps form the dough (warm water will ensure a softer dough. If you want fluffy rotis then your dough needs to be soft. Hard dough will result in hard rotis that don’t fluff up!)  3. Once the water has been mix well and there’s still dry atta left over, I add a little bit more water slowly and repeat step 2  4. Once the dough has formed but it is looking sticky, I cover the dough and let it rest for 5-10 mins. Resting is essential as it will help the gluten relax which will make it much easier to knead the dough into a smooth texture. If you skip this step then you will be left with sticky wet dough.  5. After resting, I dip my hands into warm water ensuring the front and back of my hand is wet. I then begin kneading the dough. I pull the edges into the middle and punch the dough with the back of my hands. Keep wetting your hands when needed, this helps prevent the dough from sticking to your hands and also make sure the dough remains moist.  6. Once you have a smooth dough, transfer to a clean dish, wet your hands and just form a clean smooth dough and keep the top wet with some warm water, this prevents discolouration. Cover with cling film.  7. Let the dough rest for at least 40 mins in the fridge before using.  8. Follow for part 2 on how to roll and cook the rotis!  #roti #rotiforbeginners #atta #chappati
