Mix flour, yeast, sugar, and salt. 2. Add warm water + oil, knead 8–10 mins until smooth and stretchy. 3. Cover and let rise until doubled (about 1 hr). 4. Divide into 6 equal pieces (~135g each). 5. Roll each into a 6-inch log (slightly tapered ends for the Subway look). 6. Place on a tray with parchment, cover, proof 30–40 mins until puffy. 7. Brush tops with a mix of water and milk and score each roll with a knife (be light handed, don’t score too deep!) 8. Bake at 200°C (fan 180°C) for 15–18 mins until golden and hollow-sounding. 9.
