If a Jedi picks up a new lightsaber, it was meant to be. Grievous was meant to have all those lightsabers for example. The crystal still chooses (even if it sucks for the previous user)

Ahsoka Tano’s white lightsabers started out as an inquisitor’s double sided red lightsaber. She killed the inquisitor, took the lightsaber, and purified the crystals to make them white.

How? It’s an object. It’s the kyber crystal that gives it power and bond. It bonds to that Jedi turned sith. Sith Kyber crystals don’t form in the wild. They have to been bled through from the dark side with Jedi turned sith. Or do you speak of if it’s already been bled on from on another sith and then given to a Jedi?
