Add beef and brown on all sides. Remove beef from pot and set aside. Add sliced onion to the pot and cook until softened and lightly browned, about 10-15 minutes. Stir in minced garlic and cook for 1 minute more until fragrant. Return beef to the pot. Stir in flour and cook for 1 minute.Pour in beef broth and red wine. Add thyme and bay leaf.
