so I worked in multiple Michelin star and top 100 in the world restaurants. Yes, the secret is butter, but the real secret is potatoes through a tamis to get incredibly fine, then melt butter and cream in a pan, add any herbs to steep, when it's bubbling hard you stir in the potato puree and cook until the potato has incorporated all the fat. Adjust seasoning with salt and WHITE pepper. Real fine dining pommes puree

My dad puts butter, sour cream, mustard and nutmeg into his mashed potatoes and it’s divine! His mom used to make it this way and anyone who has ever tasted it asked for the recipe.
