EPISODE 1 of my NEW SERIES, ITA-LEAN! In this series I am sharing lighter versions of classic Italian dishes and today we are tackling CHICKEN CUTLET PARM! This lightly breaded and baked version is packed with flavor and so satisfying. The whole family loved it! For my gluten-free friends, try swapping traditional panko breadcrumbs with @Aleia gluten-free panko breadcrumbs, they are my favorite. Chicken: 2 lbs thinly sliced chicken breast 1 tbsp olive oil ½ tsp salt ¼ tsp pepper Breadcrumbs: 1¼  cups panko breadcrumbs ¼ cup grated Parmigiano Reggiano ½ tsp salt ½ tsp garlic powder ¼ tsp pepper ¼ cup fresh parsley chopped 2 tbsp olive oil Everything Else: 2 tomatoes sliced thin 1 tbsp olive oil ½ tsp salt 3 cloves garlic 1¼ cup low fat shredded mozzarella Basil leaves for garnish (optional) -Preheat oven to 375F -Pat the cutlets dry and place them onto a parchment lined baking sheet.  -Lightly coat chicken cutlet with olive oil and season with salt and pepper. -To a medium sized bowl add panko breadcrumbs, grated parm, salt, pepper, garlic powder, parsley and olive oil. Mix well.  -Top each cutlet with about two tablespoons of seasoned breadcrumbs and bake for 15 minutes. -While the chicken cooks, place the tomato slices in a bowl, coat with 1 tbsp olive oil and season with ½ teaspoon salt.  -Remove chicken from oven and top with tomatoes. Grate garlic over tomatoes and top with shredded mozzarella. Bake for 5-8 minutes more.  -Serve warm with sautèed broccoli and garlic (recipe below). Sautèed Broccoli & Garlic 5 cups broccoli florets 2 tbsp olive oil 5 garlic cloves minced ½ tsp salt ¼ tsp pepper -Fill a large pot ¾ of the way with water. Bring to a low boil. -Place florets into a large colander. Place the colander with the broccoli over the boiling water. Place a lid over the colander and let the broccoli steam for about 8 minutes or until tender. -Remove from heat and rinse the pot. -Add 2 tbsp olive and garlic to the same. Sautè over medium heat. Once the garlic is golden brown, add the broccoli, salt and pepper, sautè for 3 minutes more. Remove from heat and enjoy! #Italianfood #healthydinner #easydinner
