![Macaroni Pie - Barbados 🇧🇧 Around the World - Episode 15 Ingredients: 750g long Macaroni 800g cheddar cheese 2 1/2 cups evaporated milk 1 onion 1 green chilli 3 cloves garlic 75g butter 3 tbsp pepper sauce 3 tbsp ketchup 1 tbsp english mustard 1/2 tbsp pepper] 1/2 tbsp cayenne pepper] 1/2 ground nutmeg Method: Bring water to a boil and add the broken-up macaroni and salt. Cook uncovered until tender but not overcooked (about 8 minutes). Preheat a moderately hot oven to 180°C. Drain the macaroni thoroughly. Add some butter to a large pan and soften the diced onions, diced chilli, and minced garlic. Then add the evaporated milk. When the mixture is boiling, add in 3/4 of the grated cheese and stir until smooth. Then add the pepper sauce, ketchup, mustard, cayenne, nutmeg, and pepper, and stir. Add the cooked pasta back to the pan and stir well so the sauce coats all the macaroni. Transfer the macaroni to a deep oven dish and top with the rest of the grated cheddar. Put this in the preheated oven for 25-30 minutes until golden brown. Serve with a little more pepper sauce.
