@stoneandstarter: was itching to mix dough as one does and mixed this dough late in the evening around 6pm. I used VERY cold water, and about 80 grams of starter per loaf (this is a double batch). It was temping at 67 degrees after mixing. did three rounds of fold and called it a night... literally. woke up to the tallest bowl of dough I've ever seen in person. was worried it was overproofed. but I was pleasantly surprised. it handled nicely!
