Sticky Toffee Pie Ingredients 🍪 M&S Toffee Shortbread Thins x 2 packets 🍮 M&S Sticky Toffee Sauce – 150ml for filling, 150ml for top layer 🍫 M&S Golden Blond Baking Chocolate – 60g 🧀 330g Philadelphia Cream Cheese 🥛 300ml Double Cream 🧈 55g Butter, melted 🌿 2 Teaspoons Vanilla Extract or Paste Method You’ll need a 20 or 22cm springform tin. Melt your butter and set aside. Blitz your shortbread biscuits in a blender to make crumbs add the melted butter and mix well. Pour the biscuit mixture into your tin. Use a flat bottom glass to press the crumbs into the base and edges of the tin. Pop in the freezer while preparing the filling. Empty the Philadelphia onto a plate and loosen with a spatula. In a mixing bowl, whisk the cream and vanilla to soft peaks. Add 2 spoons of the cream to the cream cheese mixture and fold together using a spatula. Then add all the cream cheese mixture to the rest of the cream and gently fold together using a spatula. Add in 150ml sticky toffee sauce and 60g melted blond chocolate, fold gently. Spoon cream mixture onto the biscuit bass and smooth over the top. Pour an even layer of sticky toffee sauce over the top. Place in the fridge for 4 hours to set.
