Polly’s Healthy Protein Pancakes: Ep.1 BANANA AND BISCOFF  Ingredients (serves 1): 1 egg 40g blended oats 1/2 mashed banana 1/2 tsp baking powder  1/2 scoop or 15g protein powder (I use @proteinworks Vanilla Crème) *If you don’t use protein powder you can simply leave it out or use vanilla extract for taste  3-4 tbsps milk (or water) To assemble the stack: Greek Yoghurt  1/2 a scoop or 15g protein powder *you can use vanilla extract to taste if you don’t have protein* 1/2 chopped banana 1 tbsp Almond Butter 1 Lotus Biscoff Biscuit  Instructions:  1. Blend your oats if you haven’t already and mash your banana. I find mashing it on a plate a lot easier.  2. Add both to a bowl, alongside the baking powder, 1 egg and 1/2 your protein powder (or 1/2 tsp vanilla extract). 3. You are looking for a fairly thick consistency to scoop it into the pan without the gooey mixture running everywhere. I recommend adding milk or water especially if you are using dry protein powder. I usually add around 3-4 tbsps.  4. Heat your frying pan on a medium hot with anything to hand (spray oil, olive oil, cocunut oil). Then using a spoon scoop about a fistful of mixture and smooth out the top slightly.  5. When you think your pancake is ready to be flipped and you can easily get your spatula underneath, flip it babbbby. Repeat, repeat, repeat until all the mixture is gone.  7. In a small bowl mix 50g greek yoghurt and the other 1/2 of your protein powder scoop (15g) *or vanilla extract to taste.  8. Finally, in a small bowl mix almond butter, a dash of maple syrup and a crushed up Biscoff Biscuit. You can add cinnamon and nutmeg to taste.  9. Now to decorate: place your first pancake on the plate and layer it with a tsp of the protein greek yoghurt mix. Then scoop a small dollop of the almond butter mix and spread thinly on top. You want to repeat this until you have a glorious looking stack.
