Pot Roast This roast is always fall apart tender and oh so delicious!! I like how easy this is to make. I typically make it on a day where I have plans in the evening and don’t have time to make dinner at dinner time. RECIPE - Makes 8 cups 2 & 1/2 lbs English Roast (chuck shoulder) 1 Tbsp avocado oil 4 cups beef broth 1 & 1/2 cup carrots, chopped 1 onion, diced 3 celery stalks, chopped salt, black pepper, garlic powder, onion powder, sage & thyme to taste (season with your heart!) 2 cups red potatoes, chopped *if desired DIRECTIONS: 1. Preheat oven to 300 degrees F. Also preheat a Dutch oven on the stove top over medium heat. 2. Cut the roast into thirds and season all sides with salt & pepper. 3. Sear the meat in the Dutch oven on all sides in hot avocado oil. *It takes about 10 minutes to get a really good sear. 4. While it’s searing, chop the veggies. 5. Add in the onions, carrots, celery, potatoes and broth. 6. Scrape the bottom of the pan with a wooden spoon to loosen those brown bits of goodness! 7. Season with salt, pepper, onion powder, garlic powder, sage and thyme. Stir. 8. Cover with a lid and place in the oven for 2 & 1/2 - 3 hours. 9. Remove from the oven and enjoy!!
