DAIRY FREE BONE BROTH MASHED POTATOES (GF / DF) ✨ A simple, protein rich and dairy free classic mashed potato without any of the processed dairy alternatives! Roasted garlic, bone broth and a dash of salt add all the richness you need to replace the butter in these healthier mashed potatoes. A must make for Thanksgiving! Save and follow @caitlinjesson for easy gluten free and dairy free recipes. 3 lbs yukon gold potatoes, peeled and quartered with peels saved 3 cups chicken bone broth, plus more as needed 2 heads garlic, tops removed Olive oil, for drizzling ⅓ cup coconut yogurt 1 tsp salt, to taste Chives, finely chopped for garnish Crispy potato skins: Reserved potato peels 1 cup olive oil Salt, to taste Preheat oven to 400°F. Add garlic to a piece of tin foil with cut side up. Drizzle with olive oil then wrap up tightly in foil. Repeat with second head of garlic then add to a baking dish and roast until garlic is softened and light golden in color, about 40 minutes. Unwrap garlic and allow it to cool while you prep your potatoes. To make potato skins, slice reserved potato skins into thin ribbons. Heat 1 cup olive oil in a small skillet over medium heat. Add potato skins and fry until golden and crispy, about 2-4 minutes, then transfer to a paper towel lined plate and season generously with salt. Add potatoes to a Dutch oven or braiser along with 3 cups bone broth. Cover and bring to a simmer over medium heat. Reduce heat to medium low and simmer for ten minutes then remove lid and simmer uncovered for ten minutes longer until potatoes are fork tender. Squeeze garlic into the pot with your potatoes and run potatoes and garlic through ricer or mash well with potato masher until smooth. Mix any leftover broth from the pan into potatoes along with coconut yogurt and 1 tsp salt. If potatoes are too dry, loosen them up with more bone broth, as needed. Adjust seasoning as needed. Transfer to serving dish and top with chives and crispy potato skins. #fypシ゚viral #fypage
