Heat olive oil in a large skillet over medium-high heat. When hot, add steak in a single layer without overcrowding. Sear 2–3 minutes per side until golden-brown, crispy outside, tender inside. Remove from skillet and set aside.   Make the Creamy Tuscan Sauce  Reduce heat slightly, add butter to the same skillet, letting it melt and pick up browned bits from the steak. Add minced garlic and sauté 1 minute. Slowly stir in heavy cream, then add broth for balance. Simmer 2–3 minutes until slightly thickened. Whisk in Parmesan and Italian seasoning for a smooth, flavorful sauce.   Add Spinach and Sun-Dried Tomatoes  Stir in fresh spinach—it will wilt quickly. Add sun-dried tomatoes if using, cooking 1–2 minutes until spinach is tender and tomatoes are warmed through.   Combine Tortellini and Steak  Return steak bites and drained tortellini to the skillet. Gently toss until everything is coated in the creamy Tuscan sauce.   Serve  Remove from heat and garnish with chopped parsley for color and freshness.
