@lungisalwaysbaking: 🍥BROWN BUTTER CINNAMON ROLL DONUTS (9–10 donuts): full recipe & method on my Substack! ✨Link in bio✨ INGREDIENTS Dough: 265g milk, 23g veg oil, 1 egg (55g), 13 active yeast, 480g very strong white bread flour, 60g sugar, 5g salt, 50g cold butter 🧈 Filling: 70g soft butter, 140g dark brown sugar, 2 tsp cinnamon, ¼ tsp salt 🤎 Icing: 190g cream cheese, 90g browned butter, 350g powdered sugar, 30g milk, 1 tsp vanilla, ⅔ tsp salt ✨ Plus: 2–3L neutral oil. ⸻ METHOD Heat milk, oil + egg to lukewarm (38–43°C) 🔥. Add yeast, whisk + rest 10 mins. Add flour, sugar, salt → mix to shaggy dough. Add cold butter → mix 8–10 mins until smooth + elastic. Cover, rest 1 hr. Chill 4–6 hrs or overnight 🌙 FILLING: Mix butter + brown sugar + cinnamon + salt until paste forms. ICING: Brown butter until nutty → mix with cream cheese → add sugar, milk, vanilla, salt → whip + chill ❄️ Next day: Roll dough ½ inch thick → spread filling → roll up → cut 9–10 pieces → pinch seams. Place on parchment squares, spaced 2–3 inches. Proof uncovered 2 hrs ⏱️ Heat oil to 170°C. Fry each donut 3m30s per side until deep golden with pale ring 🍩 Drain 30 sec → move to plate. Keep oil 165–170°C. Glaze warm donuts 😍 NOTES: Best flour = VERY strong white bread flour (Marriages/ @Waitrose & Partners Canadian Flour). Donuts best day-of.
