The next day, wash off the salt & pat dry.  * The next day, preheat oven to 170 degrees.  * For the butter, mix together all the ingredients until combined.  * Cover the chicken in the butter, under and over the skin. Stuff the cavity with the lemon, bay leaves & rosemary.  * Place the leek, grapes, fennel seeds, shallot, lemon zest & slices, olive oil, white wine, chicken stock & salt & pepper into a deep baking tray.  * Place the chicken on top, either on a rack or in the middle.  * Cook in the oven for 1 hour and 30 min.
