Sear chicken: Season thighs with salt and pepper. Heat olive oil in a skillet over medium-high. Sear chicken until golden brown (5–6 min per side). Remove and set aside. 2. Make sauce:• In same skillet, cook chopped bacon until crisp. • Add onion and garlic, sauté until soft. • Stir in flour and cook 1 min. • Slowly whisk in broth and cream. Add thyme. Simmer until thickened (5–7 min). 3. Smother chicken: Return chicken to skillet. Spoon sauce over top. Cover and simmer 20–25 min until chicken is cooked through. 4.
