These are basically French onion soup turned into the ultimate cocktail bite: jammy onions, Gruyère, and buttery, flaky phyllo. All washed down with a Lambrusco spritz that’s bubbly, lightly fruity, and so good with all that salty, cheesy richness. Cozy, festive, and very “I brought the fancy snack.” 🥂✨ Recipe (makes 12): 1 tbsp olive oil + 2 tbsp butter 2 onions, thinly sliced A few sprigs thyme 1 tablespoon butter 1 tablespoon flour 1/3 cup broth ½-¾ cup shredded gruyere cheese 4-5 sheets of phyllo dough 1 egg, beaten Flaky salt for garnish Heat your olive oil and butter in a large skillet over medium heat. Add the onions, thyme, and a generous pinch of salt. Cook slowly for about an hour, stirring occasionally, until the onions are deep golden and jammy (turn the heat down if they brown too fast). Once the onions are caramelized, add the butter and melt, then add in your flour and stir. Slowly pour in your broth a tablespoon or so at a time until the onions are glossy and saucy– this step ensures that the onions don’t dry out when we bake them! Let cool. Cut phyllo sheets into 3 long strips each – you want 12. Keep them covered with a damp towel while you work. Preheat oven to 375°F. Place a spoonful of onions and a pinch of Gruyère near the bottom corner of a strip. Fold the corner up and over into a triangle, then keep folding until you reach the top. Transfer to a parchment-lined baking sheet. Brush with beaten egg, sprinkle with flaky salt, and bake for 15-20 minutes until golden and crisp. Serve warm — preferably with a Lambrusco spritz.
