Broccoli Cheddar Soup by @Aaron Hollcraft 🔥 Ingredients: Crispy Shallots 3 Shallots, thinly sliced 1 C. Neutral Oil Pinch Salt Soup 5 Slices Bacon, diced 4 T. Butter 1 Yellow onion, diced Pinch Red Pepper Flakes 2 Heads Roasted Garlic 1 C. Carrots, shredded 3 C. Broccoli stems and florets, rough chopped ¼ C. AP Flour 1 T. Paprika 1 tsp. White Pepper 2 tsp. Turmeric Salt to taste 4 C. Chicken Stock 2 C. Whole Milk 1 ½ C. Sharp Cheddar, grated 1 C. Smoked Gouda, grated Garnish: Bacon Chives Crispy Shallots Method: 1. Start by roasting the garlic. Cut off the tops of the garlic, add a pinch of salt and a drizzle of olive oil. Wrap with foil and place in a 400 degree oven. 2. Heat about 1 C. of oil over low medium heat. Add the shallots, and let them gently fry until golden. Remove and set on a paper towel to dry. 3. While the garlic is roasting, prep the rest of the ingredients. 4. In a dutch oven, add the bacon. Turn the heat to low medium, and render the bacon until crispy. Discard most of the fat. Remove the bacon. 5. Add the butter, and turn the heat to medium. 6. Add the onions and red pepper flakes. Add a pinch of salt and sweat for about 5 minutes. 7. Add the broccoli, roasted garlic, turmeric, white pepper, and paprika. 8. Give it a good stir, and cook for about 3 minutes. 9. Add the flour, and stir to coat. 10. Slowly pour in the stock while stirring, then do the same with the milk.. 11. Bring the soup to a simmer, stirring often for about 5 minutes. When it starts to thicken, add the carrots, then the cheese, a handful at a time. 12. Check for seasoning. 13. Serve with the crispy shallots, chives, and bacon. 14.
