Remove the tomato skins using tongs or a spoon (they should peel off easily now). 	9.	Use a fork to mash the tomatoes directly in the pan. 	10.	Add all the seasoning and stir well. 	11.	Optional: add 1 tbsp of tomato paste for richer flavor. 	12.	Mix well, then add shredded mozzarella and stir again until it melts into the sauce. 	13.
