Spinach and Salmon Cottage Cheese Quiche I seriously believe my purpose on this app is to take classic meals and transform them into calorie- and macro-friendly options to support your fitness and fat loss goals. I am such a big advocate for eating foods you LOVE while dieting. It genuinely is the key to maintaining consistency while working towards a fat loss goal.  This delicious quiche is packed with protein, healthy fats, and balanced nutrients, perfect for lunch alongside or dinner. Ingredients: * 300g cottage cheese - Bulla * 100ml skim milk * 4 medium eggs * 100g spinach, wilted * 10g chives, chopped * 100g smoked salmon * Salt & black pepper to taste * 100g filo pastry sheets - Art of pastry * Spray olive oil * 50g feta cheese, crumbled - Dodoni Instructions: 1. Preheat your oven to 160°C (fan). 2. Blend the cottage cheese with the milk until smooth, then pour it into a large mixing bowl. 3. Whisk the eggs into the mixture until combined. 4. Add in the spinach, chives, smoked salmon, salt and pepper, stirring until everything is evenly mixed. 5. Lightly spray a deep round baking tin with oil. Layer the filo sheets in the tin, spraying each sheet lightly with oil as you go to form a sturdy crust, overlapping each layer as needed. 6. Pour the cottage cheese mixture into the filo-lined tin. Tuck the filo edges inward to create a border. 7. Sprinkle crumbled feta over the top. 8. Bake for 45-60 minutes, or until the quiche is set. It will continue to firm up as it cools as well.
