I add milk and a small dab of butter to the eggs and cook till its fluffy. That looks so runny still 😩

I was always told not to add salt and pepper until after the eggs were cooked... scientifically it breaks them down if you add them in before...

No such thing as perfect. There's no right or wrong way. I prefer fluffy and not soggy. Its personal preference.
