This dressing recipe went viral on this app 4+ years ago and to this day people comment on that video saying how much they love it! I don’t blame them, it’s amazing. David literally loved it.  The combination of textures of the edamame, beans, and softened kale from the dressing is so nice. Not to mention the little kick you get from the jalapeño!  We often think vegetables alone are enough fiber but really, 1 cup of kale only gives up 1.3g of fiber. So adding the beans and edamame goes a long way. Same thing with protein. Beans aren’t enough on their own but combining it with edamame, the greek yogurt dressing, and parmesan gets us a lot closer to where we need to be. Ingredients for 4-6 servings (4 as main meals, 6 as sides) Salad:     - [ ] 1-2 cups shelled edamame      - [ ] 1 can white beans, drained and rinsed     - [ ] 6-8 cups kale, chopped     - [ ] 1 jalapeno, diced Dressing:     - [ ] 3/4 cup greek yogurt     - [ ] 1/2-2/3 cup parm     - [ ] Juice of half a lemon     - [ ] 1 tbsp worchestershire sauce     - [ ] 1-2 tsp mustard     - [ ] 2 cloves garlic, minced     - [ ] Salt and pepper to taste     - [ ] Water to thin as needed Directions: 1. To a large salad bowl combine all of the dressing ingredients and mix until well combined. Add water or milk to thin until you’ve reached desired consistency. Taste and adjust seasonings as needed.  2. To the same bowl, add edamame, beans, kale, and jalapeño. Mix well and serve!
